From the Doi Mae Salong mountains of northern Thailand comes a complex, deeply oxidized oolong made from the qing xin cultivar. Rich soil, high elevation growth, and slow baking bring out layers of cocoa, raisin, and buttery shortbread cookie. Thai Ruby is grown at 1,600 meters elevation and harvested in the fall.
Look for notes of black cherry, caramelized fruit, and a full body.
