Developed in Japan in the mid 1980s, GABA tea is created by replacing the presence of oxygen with nitrogen during the phase of tea processing otherwise known as oxidation. The result is a leaf high in gamma-aminobutyric acid, an amino acid with potentially calming effects on the central nervous system, and a definitively exquisite flavor profile as far as this oolong is concerned.
From Taiwan's Mount Ali, this gaba oolong is partially shade grown, upping the amino acid profile which includes not just GABA, but our old favorite L-theanine. The result is a singular expression of umami in all of its savory glory. Brothy on the nose with a sweet, subtle finish; close your eyes and try not to think of miso soup.
