Tender young leaves of spring and summer harvests are moderately steamed (chumushi style) and expertly processed to accentuate subtle umami, sweet seaweed, and baked shortbread aromas. You won't find inherent bitterness or astringency in this skillful blend of cultivars anchored by saemidori and okumidori.
